I found a great pudding recipe for the Vitamix which also has an alternative microwave method. I made Vanilla, Lemon and Chocolate versions.
For the baseline diet it is probably best to stay away from the chocolate version because Cocoa powder is about 10% starch. I worked out that this recipe would contain about 0.5g starch per serving so is probably fine. I also just got lost in a chocolate cyberspace wormhole so I'm working on some recipes to make our own chocolate.

Vanilla Pudding
You will need....
5 large eggs
1/2 cup water
1/4 cup fructose or Agave
1 tsp Vanilla Essence
Pinch salt
1/2 cup coconut oil - melted
Vitamix Method
1. Put all ingredients except oil into the blender.
2. Start at speed 1 and gradually increase to 10. Blend for 5 minutes.
3. Reduce to speed 3 and add the coconut oil while blender is running.
4. Blend for 30 more seconds then allow to cool to room temperature.
5. Chill in the fridge.
Microwave Method
1. Melt oil on high for 30seconds till completely melted.
2. Add the rest of the ingredients and stir together gently.
3. Cook in the microwave on high for 2-3 minutes, stop and stir every 30 seconds till the sugar is dissolved.
4. Cook for 2 more minutes, stopping to stir at least twice, till mixture thickens.
5. Cool to room temp then chill.

This is also great as a spread or dip! Here it is on my first attempt at Flax and Chia Focaccia Bread.
